One question though....should the DHCP service on the redundancy server startup be set to Manual to stop it starting on a server reboot ?

It should be set to Automatic.
The DHCP-Redundancy service will stop the DHCP-Server service at boot.

Thanks this answered my question as well. Service Statup Type should be "Automatic" on both Master and Replica.
